We were in Napa over 15 years ago when we dropped by a little bistro for some lunch. I immediately spotted Creme de Tomate en Croute (Tomato Soup in Puff Pastry) on the traditionally French Bistro Menu. Being a Tomato Soup lover since my youth, I had to have it. All I can say that all these years later, I remember it as the essence of Tomatoes and Cream, seasoned perfectly, and made even more decadent with the Puff Pastry “lid”. I was so impressed that I begged the Chef/Owner for the recipe and he was kind enough to give it to me.
When I noticed McClendon’s Select had Campari Tomatoes for sale at the local Farmers Market, I knew I’d be tasting this wonderful soup again. I made a batch that yielded 11 quarts from 25 pounds of fresh tomatoes, along with some onions, garlic, fresh herbs, over 2 pounds of Butter and 1/2 gallon of Heavy Cream. It is so amazing, I didn’t need to bother with the Puff Pastry. We now offer it frozen, by the quart, to our Home Delivery clients…while the limited supply lasts.
