fish&chipsThe Bride’s family first contacted us over a year ago to discuss their vision for this event.  They are originally from England and wanted food from their Homeland as well as their Home in Arizona.  The Bride & Groom also wanted a casual atmosphere as well as their favorite flavors of cookies and ice cream for Dessert.  The Wedding Ceremony and The Reception were both to take place in the back yard which required a reset before food service could begin.  As a result, the concept called for Passed Appetizers and 5 Food Stations where we served a different themed menu.

The evening was a hit.  We were especially pleased for the Fish & Chips kudos we got from all of the English guests!

Tequila-Lime Marinated Smoked Salmon with Cilantro Cream Cheese on individual Indian Corn Crisp

Southwest Sunset Chipotle Pepper Tartlet–Whipped Chipotle Pepper Cheese, Mandarin Orange, Chipotle Pepper Glaze and Cilantro

Vegetable Napoleon Parmesan Crisp — Roasted Vegetables Layered on Top of Crisp Parmesan Cups with Herb Cream Cheese

Vegan Spring Roll –Julienne Yellow Squash, Zucchini, Asparagus, and Carrots Drizzled with Hoisin Glaze and Rice Wine Vinegar rolled up in Rice Paper

    Erin and Mark truly listened to what we wanted and then helped us round out the edges of our plan. They got excited with us and laughed with us. On the day they were cool, calm and really made the whole experience easy. They even sneaked us a plate of appetizers after the ceremony – class act! Watching all our friends and family ohhh and ahh over the food and have fun with the concept was so special. Highlights for me were the brisket sliders, tikka masala (soooo good!) and the chocolate sorbet. The fish and chips were definitely a hit. I only had one bite of a chocolate cookie so I think I’ll have to special order a batch. They were gone in a heartbeat!

    Erin and Mark made my wife happy. And that’s not always easy! Every bite I had was delicious.
